CORNucopia

Wikipedia definition:cornucopia (in Latin also cornu copiae) or horn of plenty is a symbol of abundance and nourishment, commonly a large horn-shaped container overflowing with produce, flowers, nuts, other edibles, or wealth in some form. 

This post is about corn. Lots and lots of corn. My dear husband has made it his yearly mission to freeze corn.  The trouble/beauty is each year he wants to freeze more and more and more. This year he husked, took the kernels off and boiled 104 cobs of corn.  He then packaged them into freezer ziploc bags ready to eat all fall and winter long. The beauty of this “investment” corn is that you have the great taste of summer corn all year round!
